Kosher certification agencies ensure that food we eat is kosher, but there are some foods that consumers - and kosher agencies - can use, even if they do not bear certification. These tend to be foods that are made from relatively simple ingredients which are raw or minimally processed, and, thereby, avoid the possibility that they contain problematic ingredients, were processed on equipment used for non-kosher, or have halachic issues such as insect infestation, bishul akum, and the like.
